The Garde Manger is a member of the Food & Beverage team, responsible for leading and executing, hands on cold food production preparations in order to ensure guests, volunteers and employees of the Calgary Stampede have an exceptional dining experience.
Responsibilities of this role include, but are not limited to:
Preparation, presentation and execution of all cold foods.
Provide garde manger department daily /weekly direction
Ensure all items prepared exceed our standards for quality, freshness and taste.
Following all AHS food handling, storage and recording guidelines.
Participate in recipe and menu development
Counting of monthly cold production items inventories
Lead daily/weekly meetings with Sous Chef
Maintain food and single service products stock levels, utilizing order guides
Receiving daily food deliveries for area- FIFO
The ideal candidate will be motivated, enthusiastic and have the ability to multitask. He/she will have an undergraduate degree in Culinary Arts, Food Services Management or a related field, as well as the following:
Five plus years of related culinary experience.
WHMIS certification is required. Section 31 is required
Knowledge of Hazard Analysis Critical Control Point (HACCP) is required.
Excellent organizational, communication, problem-solving and decision-making skills.
